Chickpea Flour Scramble

Use this savory, fluffy scramble wherever you would use scrambled eggs: with your oatmeal, next to pancakes, or in a burrito or sandwich. With no cholesterol and a lot of protein, folate, and fiber, they're a great way to keep your diet on track too.

Chickpea Flour Scramble will help you through busy times or shortages. Forgot to soak or cook beans? Make a scramble. Make a big batch and reheat through the week. Unlike eggs, a bag of chickpea flour can be dropped without damage, kept unrefrigerated, and lasts for years. Roasted Carrot and Garlic Soup

I actually did a little dance of delight when first tasting this soup. Such rich flavor and so easy!  Roasting elevates inexpensive and easy-to-keep ingredients to gourmet heights. Just the ticket if you having Brad Pitt or Alicia Silverstone over for dinner.

Chickpea Triangles

Serve these delicious Chickpea Triangles in place of turkey for a vegetarian or vegan Thanksgiving. Omnivores will want to have both. These savory wedges say "main-dish protein" without resorting to faux meat charades.

Top them with Mushroom Gravy, made while the triangles bake.

Active time: 20 minutes, starting with cooked chicchickpea triangles with mushroom gravy and cranberry saucekpeas. Total time: 40 minutes. Serves 4.

Recipe ingredients

2 cups cooked chickpeas
1 clove garlic
1 tablespoon butter or 2 teaspoons corn oil
1/2 onion
1 carrot
1 teaspoon cumin
1/2 teaspoon coriander
1 tablespoon tahini
2 teaspoons soy sauce

Stir-Fried Vegetables with Chickpeas and Peanuts, Summer Edition

Eat the rainbow with this super-healthy, super-fast dinner. The summer version uses summer squash and peppers of all colors, plus cabbage, onions, and garlic. Add chickpeas and peanuts for satisfying protein and crunch, then serve over brown rice, quinoa, or noodles. Use a thrifty trick to get peanut oil without investing in a whole bottle of it, too (see tips below).

Hummus Recipe

This rich, garlicky spread makes a main dish out of roasted vegetables. Warm hummus up and use it as a gravy over roasted carrots, white and sweet potatoes, onions, and green peppers. Or use hummus as a dip for vegetables, a spread for toast, or as a sandwich filling. It keeps for several days in the refrigerator and freezes well.

Active time: 10 minutes, starting with cooked beans. Makes 8 servings, 1/2 cup each.
