Fresh-Start Challenge, Week 2, Day 1
Welcome to Week 2, when you do all your cooking from scratch using the core winter cooking plan. How core? So core it's used year-round, whenever you're not doing something fancy like making lasagna or ice cream.
How delicious? Enjoy Chocolate Upside-Down Cake and an oatmeal-raisin dessert today, plus bread and chili made last week. Here are the menus for the Plant-Strong and Classic options for the week.


Today, you'll do Core Cooking Session One from the Winter Menu in Wildly Affordable Organic, plus bake two desserts to make the transition to all-scratch cooking. See the book for details, but here are the options used for the Challenge.
Start the dough for Good Whisk Bread. Clean and soak chickpeas and split peas.
Classic:
- Bake Oatmeal-Raisin Cookies and Chocolate Upside-Down Cake. If you have extra milk in the house, you can choose to make eight servings of Chocolate Pudding instead of a Chocolate Upside-Down Cake after you make Yogurt.
Plant-Strong:
- Bake Sweet-Sixteen Oatmeal-Raisin Bars and Chocolate Upside-Down Cake.
- Don't make yogurt or pudding.
